I thought I might include a few of my fave recipes on the blog this year. Confession though: I don't really love cooking. But I do a lot of it. So when I find a recipe my family loves, I get excited to add it to the roster.
My husband has declared this "the best meal I make". Wow. Okay, then.... worthy to share with you all.
Easy Sausage Tortellini Soup with Garlic Bread
1 Package of Johnsonville Mild Italian Sausage
4 cups Chicken Broth (I love Campbell's)
1 can of Diced Tomatoes
1 can of Tomato Paste
1 cup of chopped carrots
1 small chopped zucchini
1 16 oz package of frozen tortellini
3 tsp Italian Seasoning
3 tsp minced garlic
Dash of Salt
Dash of Pepper
Shredded Parmesan Cheese
PAM Cooking Spray
Directions for Soup:
Cook sausage in a pan. In a separate pot, stir together the chicken broth, tomato paste, diced tomatoes, carrots, zucchini and all seasonings and heat to a boil. Add in the frozen tortellini and cook for 10 minutes. Meanwhile cut the cooked sausage into small pieces, then add to the pot. Once tortellini is cooked, turn heat down to a simmer. Let simmer for 10 more minutes. Serve and top with fresh parmesan and basil.
Directions for Garlic Bread:
This is the easiest (and healthiest) version of Garlic Bread you'll ever have. I just buy a french baguette and cut into slices. I spray a little PAM cooking spray on each piece and sprinkle each with some garlic salt. Broil on a cookie sheet for 2 minutes. We like this version better than using butter because it cuts out a few calories!
